There’s a quiet kind of joy in making something simple — not just because you have to eat, but because it brings you comfort.
For a while, I lost touch with that feeling. Cooking became a chore. I overcomplicated it, tried to meal prep like a fitness blogger, or guilted myself into making meals that looked good on Pinterest but didn’t feel like me.
Eventually, I came back to the basics — recipes I actually love making, not just once, but over and over again. They’re comforting, no-fuss, and full of flavor. They’re not fancy… but they feed both body and spirit.
So here they are: five go-to recipes I never get tired of — and always come back to when life feels too fast.
🍝 1.
Garlic Butter Pasta with Greens
This is my lazy day hero. Just boil pasta, sauté some garlic in butter, toss in chopped spinach or kale, and top it with a handful of grated parmesan and a squeeze of lemon.

It takes 15 minutes, feels cozy, and somehow tastes like something from a café.

Savory Breakfast Bowl
I layer warm rice or quinoa with scrambled eggs, avocado, a drizzle of hot sauce, and whatever leftover roasted veggies I have.

Creamy Tomato Chickpea Stew
This one’s perfect for cooler days. I simmer canned chickpeas in coconut milk, canned tomatoes, garlic, cumin, and a pinch of chili flakes. Serve with toast or rice.

It’s rich, nourishing, and so good you’ll forget it was mostly pantry staples.

Lazy Girl Guac Toast
Mashed avocado, lime juice, sea salt, and chili flakes — that’s it. Sometimes I add a poached egg, or feta, or sliced cherry tomatoes.

It takes five minutes and makes me feel fancy with minimal effort.
🍪 5.
One-Bowl Banana Oat Cookies
Mashed bananas, oats, a scoop of peanut butter, and chocolate chips. Mix and bake. Done.

They’re healthy-ish, toddler-approved (if you have one), and perfect with tea or coffee.

These recipes aren’t revolutionary — but they’re reliable, nourishing, and familiar. They make life feel more manageable, and more delicious, without demanding too much of me.
And honestly? That’s the kind of food I want in this chapter of my life.
